Groceries for 6/28 through 7/4

Dairy:
2 tbsp grated Parmesan Cheese
1 3/4 c milk
Whip cream or Cool whip

Produce:
1-2 pounds pork chops
Lettuce
Lloyds BBQ tub
4 small boneless, skinless chicken breast halves (about 1 pound)
3 eggs
2-3 lbs stew meat
1 pound hamburger
5 medium baking potatoes
2 cups chopped carrots
1 cup chopped celery
Fresh berries

Other:
Hamburger buns
¾ c cornflakes, crushed (about 1/3 c)
¼ tsp dried Italian seasoning, basil, or oregano, crushed
Salt
Pepper
Bay leaf
64 oz spaghetti sauce (2 26 oz cans, 1 jar or however you want to purchase it)
8 oz spaghetti, fettuccine, or other pasta
2 cups all-purpose or whole wheat flour
1/2 c vegetable oil
1 tbsp granulated or packed brown sugar
4 tsp baking powder
1 box of hamburger helper mix

Pepsi is $3.68 for a case, buy 2 cases and get a 12 pack free, buy 4, get 2 12 packs free
Kraft Cheese is $1.77
Other than that, I'm a little disappointed in Cub's deals this week.

If you are in the market for corn on the cob - Target has the best price 10 ears/$1. May be a good choice for your 4th of July meal.

BBQ Beef Sandwiches

Since I have been planing my menus a month at a time for years now, I'm at a slight advantage this week - I know what I need to use up before it goes bad. For today's meal you have 2 options. Option 1: go to the store and buy a tub of Lloyd's BBQ meat, heat, serve on a bun. Option 2: use leftovers from last Friday's slow-cooker pot roast, add BBQ sauce, heat, slop on a bun and eat. I'm choosing option 2 since I have leftover beef.

If stew meat for Wednesday is frozen, put it in the fridge to thaw today!

Chicken Parmesan

I have not tried this recipe. If you love it, I take full credit it. If you hate it, you tried something new and that's really good for you. This recipe serves 4 (depending on appetites) and should take you about 35 minutes from start to finish, with 15 minutes of prep work.

Ingredients:

4 small boneless, skinless chicken breast halves (about 1 pound)
1 slightly beaten egg white
3/4 c cornflakes, crushed (about 1/3 c)
2 tbsp grated Parmesan cheese
1/4 tsp dried Italian seasoning, basil, or oregano, crushed
1/8 tsp black pepper
1 1/3 cups spaghetti sauce
8 oz spaghetti, fettuccine, or other pasta, cooked and drained

Directions:

Preheat oven to 400˚F. Place each chicken breast half between 2 pieces of plastic wrap; pound lightly with the flat side of a meat mallet (or rolling pin) to flatten to about 1/2 inch thick. Remove plastic wrap. Lightly coat a shallow baking pan with cooking spray; set aside. In a dish, combine egg white and one tbsp water. In another dish combine crushed cornflakes, Parmesan cheese, Italian seasoning and pepper. Dip chicken pieces into egg, then coat with crumb mixture. Place chicken in pan and bake 15 minutes or until it’s tender and no longer pink.
Meanwhile, in a small saucepan, warm spaghetti sauce over low heat. Divide pasta among 4 plates. Add chicken and spoon spaghetti sauce over it.

Beef Stew (Double Coupon Day at Rainbow Foods!)

This is my version of my mom's Beef Stew recipe. Its fast, yummy, and good eating for days you don't want to turn on the oven. This makes about 8 servings.

Ingredients:

2-3 pounds stew meat
1-2 26 oz cans spaghetti sauce
5 medium baking potatoes
2 cups chopped carrots
1 cup chopped celery
1 bay leaf
salt and pepper, to taste

Directions:

Chop stew meat into bite sized pieces. Put into crock pot. Cut potatoes, carrots, celery, and any other desired vegetables into bite sized pieces and place into crock pot. Top with bay leaf and spaghetti sauce. Cook on low 8 to 10 hours.

Waffles

I always double (or triple or quadruple) my waffle recipe and freeze the leftovers. You can take the leftovers out of the fridge, pop it in the toaster, and have for breakfast. Yum. This will make 6 - 7 inch round waffles. If your waffle maker makes square waffles you can either figure out the square inches of waffles yielded and apply to the dimensions of your waffles, or count the number of waffles you can make and remember for next time. Your choice.

Ingredients:

2 large eggs
2 cups all-purpose or whole wheat flour (if using self rising flour, omit baking powder and salt)
1 3/4 c milk
1/2 c vegetable oil
1 tbsp granulated or packed brown sugar
4 tsp baking powder
1/4 tsp salt
Fresh berries and whip cream for topping

Directions:

1. Heat waffle iron. 2. Beat eggs in large bowl with hand beater or wire whisk until fluffy. Beat in remaining ingredients just until smooth. Don't over beat. It isn't polite. 3. Pour a scant 2/3 cup batter from cup or pitcher onto center of hot waffle iron. Close lid of waffle iron. 4. Bake about 5 minutes or until steaming stops. Resist the urge to check your waffles every 5 seconds. It slows down the cooking process. Carefully remove waffle when cooked. Top with fresh berries and whip cream and serve immediately. Repeat with remaining batter.

Hamburger Helper

Today is a lazy day. We are having hamburger helper.

Ingredients:

1 pound of hamburger
1 box of hamburger helper mix

Directions:

Read the back of the box. Follow directions on the back of the box.
